Venison Burgers:
Ingredients:
- 500 grams ground venison
- 150 grams ground pork (optional)
- 1/4 cup breadcrumbs (optional, for texture)
- 1 brown onion, finely chopped
- 1 clove garlic, minced
- 1 egg, lightly beaten
- 1 tsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika (optional)
- Cheese slices (optional, for topping)
- Burger buns
Toppings:

- condiments of your choice (tomato sauce, bbq sauce, mustard, relishes, etc.)
Instructions:
1. Combine Ingredients:

- In a large bowl, mix together the ground venison, ground pork, breadcrumbs, diced onion, garlic, egg, Worcestershire sauce, salt, black pepper, and smoked paprika.
- Combine until just mixed; do not overwork the meat.
2. Form Patties:
- Divide the mixture into equal portions and shape each portion into a patty about 1-inch thick.
- By Keeping the patties thicker, you will have a more tender venison burger. Aim for medium rare and slightly pink in the middle.
3. Preheat Grill or Skillet:
- Preheat your grill to medium-high heat or heat a skillet over medium heat.
- Lightly oil the grill grates or the skillet to prevent sticking.
4. Cook the Burgers:
- Grill or pan-fry the patties for about 4–5 minutes per side for medium-rare, or until they reach an internal temperature of 130°F–140°F (55°C–60°C).
- If adding cheese, place a slice on top of each patty during the last minute of cooking to melt luxuriously over each burger.
5. Toast the Buns:
- If desired, toast the burger buns on the grill or in a separate skillet until golden brown.
6. Assemble the Burgers:
- Place the cooked venison patties on the bottom half of the buns. Add your favorite toppings and condiments. Top with the other half of the bun.
7. Serve:
- Serve the venison burgers immediately with sides like fries, salad, or coleslaw.
Tips
Fat Content:
- Venison is a very lean meat with minimal fat.
- By adding ground pork or beef fat, it helps keep the burgers juicy.
- You can also use diced bits of bacon or the bacon fat itself for additional flavour.
Seasoning:
- Feel free to customise the seasoning to your taste.
- Adding a variety of herbs or spices can enhance the flavour and add different elements to the burgers.
- For example, adding curry paste may give off a slight Malaysian or Indian inspired flavour profile.
Cooking Method:
- You can also cook these burgers in the oven or an air fryer at 190°C (375°F) for about 20 minutes, flipping halfway through.
