Ingredients

Meat / Koftas

  • 500g ground venison
  • 200 grams of ground pork or beef fat (or a mix of both)
  • 1 small onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1-inch ginger piece, grated
  • 1/4 cup fresh parsley or cilantro, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika or cayenne (for a bit of heat)
  • 1/2 tsp ground cinnamon
  • Salt and pepper, to taste
  • 1 tbsp olive oil (for brushing)
  • 1 fresh lemon

For Serving

  • Yogurt or tahini sauce
  • Pita bread, naan, cous cous or rice for serving
  • Fresh salad (tomato, cucumber, and onion mix)

Method

Prepare the Meat Mixture

  • In a large mixing bowl, combine the ground meat, chopped onion, garlic, ginger, parsley, cumin, coriander, paprika, cinnamon, salt, and pepper.
  • Mix well until all the ingredients are thoroughly combined.

Shape the Koftas

  • Take a small handful of the meat mixture and shape it into oval patties or cylinders.
  • Pressing them gently around skewers if desired.
  • Repeat with the remaining mixture.

Cook the Koftas

  • Cooking the koftas can be done either through grilling, pan-frying or baking.
  • We prefer to pan-fry the koftas.
  • Heat a bit of oil in a skillet over medium-high heat, then cook the koftas for about 4–5 minutes per side, until nicely browned.

Serve

  • Serve the koftas warm with yogurt or tahini sauce, pita bread or naan, and a fresh couscous salad.
  • Add plenty of lemon to compliment the dish.
