Ingredients
- 2 racks of wild game ribs (venison or pork) (about 3-4 lbs)
- Salt and black pepper, to taste
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp brown sugar
- 1 tsp chili powder (optional, for heat)
- 2 cups beef or chicken broth
- 1 cup apple cider or apple juice
- 2 tbsp apple cider vinegar
- 1 cup BBQ sauce (homemade or store-bought)
Instructions
1. Preheat the Oven:

- Set your oven to 300°F (150°C).
2. Season the Ribs:
- Mix the salt, black pepper, smoked paprika, garlic powder, onion powder, brown sugar, and chili powder in a small bowl.
- Rub this dry seasoning mix generously on both sides of the ribs.
3. Braise the Ribs:
- Place the ribs in a large roasting pan or baking dish.
- Pour the broth, apple cider (or juice), and apple cider vinegar around the ribs (not over them) to keep them moist while they braise.
- Cover the pan tightly with aluminium foil to lock in the steam.
4. Bake:
- Bake for 2.5 to 3 hours, or until the ribs are tender and almost falling off the bone.
- You can test their level of cooked or doneness by gently pulling on the bone. If it easily slides through the meat you have cooked tender ribs!
5. Glaze with BBQ Sauce:
- Preheat a grill to medium heat, or set your oven to broil.
- Brush a generous amount of BBQ sauce over the ribs and place them on the grill (or back in the oven, uncovered) for 5–10 minutes per side, basting with more BBQ sauce as they cook until caramelized.
- For a messier, yet more charcoaled version, cook on the BBQ.
6. Serve:
- Slice the ribs into smaller portions and serve with extra BBQ sauce on the side.
