Ingredients:
For the noodles:
- 200g Hokkien noodles (fresh or dried)
- 500g venison sirloin or flank steak (thinly sliced)
- 2 tablespoons vegetable oil
- 2 garlic cloves (minced)
- 1 small onion (sliced)
- 1 red capsicum (sliced)
- 1 carrot (julienned)
- 2 spring onions (chopped)
- 150 grams Green beans
For the sauce:
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon hoisin sauce (optional)
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 1/2 cup beef broth or water
Instructions:
1. Prepare the noodles:
- Using dried Hokkien noodles, cook them according to the package instructions. If using fresh noodles, simply separate them and set them aside.
2. Prepare the beef:
- In a bowl, mix the sliced beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and a pinch of white pepper. Let it marinate for about 10-15 minutes.
3. Make the sauce:
- In a small bowl, combine the soy sauce, oyster sauce, dark soy sauce, hoisin sauce, sugar, and beef broth (or water). Stir well and set aside.
4. Stir-fry the beef:
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated beef and stir-fry for 1-2 minutes until it's just cooked through. Remove the beef from the pan and set it aside.
5. Stir-fry the vegetables:
- In the same pan, add another tablespoon of oil.
- Add the garlic and onion and stir-fry for 1 minute.
- Then add the red bell pepper, carrot and beans, cooking for another 2-3 minutes until the vegetables are tender but still crisp.
6. Combine the noodles:
- Add the cooked noodles to the pan, followed by the sauce mixture.
- Stirring everything together for 2-3 minutes, allowing the noodles to absorb the sauce.
7. Add the beef:
- Return the cooked beef to the pan and toss everything together. Stir in the spring onions.
8. Serve:
- Once everything is evenly mixed and heated through, serve the Hokkien beef noodles hot, garnished with additional spring onions, chilli slices if desired and sesame seeds.
